Lupin (or Lupini) Bean Tabouleh Salad

Lupin beans are a good solution for those who look for vegan, gluten-free, low-carb, high -protein, and high-fiber substitute for grains and proteins. That’s a lot of health packed into a little bean! Forty grams (40 grams= 4 tablespoons) of ground lupin beans (this is how they are sold in store) will provide you with a generous amount of protein (16 grams) and 16 grams of carbohydrates, of which 15 grams of that is pure fiber!! If you need yet another reason to include Lupin beans in your diet, I should tell you it also highly rich in potassium, which is an important electrolyte our body needs for normal functioning of the cells, nerves, and muscles. The high fiber content of lupin beans supports a healthy cardiovascular system, as fiber is essential for lowering cholesterol levels and preventing formation of blood clots in the vessels. Ingredients:

  • 1 bunch of parsley, thinly chopped
  • 1 medium tomato, cut into small cubes
  • ¼ cup red onion, thinly chopped
  • 4 tablespoons of ground lupin bean
  • Juice from ½ lemon
  • Salt to taste
  • Optional: chopped scallion, olive oil

Directions:

  1. In a microwave-proof bowl mix the ground lupin bean with ½ cup water. Use the microwave on HIGH for 3 minutes.
  2. Add all the ingredients to a salad bowl and toss well.
  3. Serve.
